CHIM. Principal alcaloïde du thé identique à la caféine. [Oudry retrouva, en 1827, la caféine] dans le thé et la prit pour un corps nouveau, auquel il donna le nom de théine (WURTZ, Dict. chim., t. 1, vol. 2, 1870, p. 693). La théine, principal principe actif du thé, se trouve dans une proportion de 2 pour 100 de feuille sèche dans le thé noir; le thé vert, qui est plus excitant et aussi plus parfumé, peut en contenir jusqu'à 5 pour 100 (MACAIGNE, Précis hyg., 1911, p. 256).
